How To Make Chicken Biryani?
Chicken Biryani is a popular Indian food- rice cooked with spicy chicken, to explain it roughly. The spices used in Biryani provide a variety of flavors.
These days there are loads of ready-made Chicken Biryani masalas available in the market! it has made people's life easy, there is no doubt about it, but since I am old school and still believe I should know what I am eating so I make my biryani masala at home! It's not difficult! All you need is all the required spices in your cupboard and a little bit of willpower!
It is easy to make chicken biryani at home through our step-by-step process with photos. Just follow these steps below to make your delicious biryani with zero knowledge in cooking.

For Biryani Masala:
Trust me it's tastier than the readymade masala, has more flavors, and certainly more healthy!
How To Make Biryani Masala: You can make it in advance and keep it in a jar! Roast everything lightly on low heat in a Tawa or a pan! Let it cool down! Once it has cooled down, grind it into a smooth powder (as smooth as possible).

Soak the rice at least for an hour or more the merrier!

Step By Step Process:
Now It's time to cook and it is the main part of cooking anything. Follow the instructions and make your own biryani.
#1. Heat half a cup of cooking oil and add washed chicken to it! Stir fry the chicken for about 5 minutes!
#2. Add ginger and garlic paste, stir it nicely. Add tomatoes, coriander powder, chili powder, turmeric powder, and salt. Stir it well and let the spice mix cook with the chicken for at least 7 minutes or so on medium heat.
#3. Now add 5 full teaspoons of the biryani masala that you had prepared! Mix it and cook for five minutes! Keep stirring!
#4. Now add Yogurt and potatoes and let the masala cook till the oil separates.
#5. Make sure the masala is very thick/well sticky! Not runny masala, please!
Once you think masala is cooked, add mint leaves or dry mint and saffron. At this stage, check the salt. Add more if required and keep the chicken aside! let it cool down!
Boil rice!
#6. Wash the rice, drain all the water!
#7. In a big pot, take water and fill it half at least, and let it boil! Add 5 tsp of salt( or to your taste), three whole green chilies, two bay leaves, two black cardamoms and a 1-inch long stick of cinnamon, and two tsp of cooking oil, add rice and boil it till you get more than half-cooked rice( rice should not be fully cooked).
#8. Once the rice is done, drain all the water in a colander!
#9. Now in the same pot in which you have boiled rice take half of the rice! Arrange all the meat on top of it! Take the rest of the rice and arrange them on top of the meat!
#10. (At this stage see if your rice is ok to steam on its own! If you think they are tight, pour a tiny bit of water around the corners of the pot!)
#11. Take less than half a tsp of red/orange food color and mix it with a tiny bit of water and pour it on one side of the rice! Close the lid and wait till you see rice being steamed properly! you have to give dum to the biryani!
#12. In the meantime, in a frying pan, heat 1 cup of oil and fry onions in it till golden, pour it on biryani and close the gas and close the lid! If possible cover it with a piece of cloth so that the steam does not go out!
Your biryani is done! You can mix it any which you like! I use a fork to mix or sometimes just hold both the handles of the pot with the lid on and shake it on both sides! The idea is to mix it in a way that rice doesn't break. Eat it with raita or plain yogurt and salad of your choice!

Mistakes To Avoid:
For the best chicken biryani, you must have to avoid these steps otherwise it can be bad to taste.
1. If you ever feel that your Biryani is too spicy or it has too much masala- just boil 2 cups of rice and mix them in the already cooked biryani.
2. Add only the exact quantity of ingredients mentioned before.
3. Mix the biryani from time to time while cooking otherwise it can burn from the lower side of your pan.
