What Is Vegetable Pulao?
Pulao or Pulav is a very common rice dish in India. It is very easy and quick preparation. This one-pot dish made with rice and lots of veggies has added spices and herbs giving it a mild aromatic flavor.
This recipe is also ideal for fussy eater kids who generally do not love vegetables. It is a vegetarian dish and is tastes on its own or accomplish with raita, coriander chutney, pickle. One can also serve with egg curry, chicken or mutton curry, or panner curry whatever you want.

Step By Step Process:
Please follow these steps for a better result.
( Preparation )
#1. Rinse rice for about 10 minutes till the water runs clear of starch and becomes transparent.
#2. Drain all the water from the rice bowl and keep aside at least 30 minutes for soaking.
#3. Clean and cut all veggies above mentioned into small pieces.
#4. Cut the onion into slices.
#5. Make a ginger, garlic paste.

#6. Take a pot or pan, heat ghee or oil, fry cashews, and raisins, keep them aside. Next, add all whole spices mentioned above to the same oil, fry it till the oil becomes aromatic and spices splutter.
#7. In the same oil, add onions and fry till golden brown in low medium flame. Then add ginger – garlic paste and mint or coriander leaves, fry till their raw aroma goes away.
#8. Add all chopped veggies, fry it in the same pan for 2 minutes, add salt as per taste, and garam masala powder and fry for another 1-2 minutes.
#9. Add soaked rice into the pan and fry it gently and for 1 -2 minutes on a low flame so that the rice gets well coated with oil.
#10. Add water into the pan as per required (generally the rice and water ratio is 2:4) and stir carefully and eventually. Cover pan with lid, keep it on low flame for about 10 minutes.
#11. Check-in between a few intervals whether pan water is enough or not. If required add water little by little and gently stir the rice with a spatula without breaking rice grains.
#12. Once the rice is cooked, fluffy, switch off the gas stove and keep the pulao over gas for 2-3 minutes. Do not remove the lid.
#13. Then transfer the pulao from the cooking pan to the serving bowl.
#14. Garnish it with fried cashews and raisins. Your favorite Pulao is ready to serve.
#15. Serve it with raita, salad, green chutney, or any favorite curry.

Mistakes To Avoid:
If you want to make delicious vegetable pulao then you should have to avoid these mistakes. Please carefully read them and start making.
1. Always use aged rice which gives fluffy look to pulao.
2. You will need to adjust the quantity of water, depending on the rice.
3. Rinsing and soaking of rice are the best part to make perfect pulao. Always rinse rice at least 3 times until the water becomes clear because the starch of rice becomes pulao mushy and sticky.
4. Soak rice for at least 15-20 minutes, so that the rice grains absorb water and swell up to the maximum.
